I started thinking about a dessert that would be special for Valentine’s day. I wanted it to be cute, but still really tasty. And I couldn’t decide between a cake or a brownie – so I put them together!
I’ve had some grapefruits hanging around so I wanted to incorporate that flavor into the cake and glaze. The brownies I made from scratch – the recipe I followed claimed to be the best brownie recipe ever – and I think they were right!
I made the brownies in a sheet like I normally would, but after it was cooked and cooled, I used a biscuit cutter to make circles. The brownie was so soft and fudgey that I had to try really hard to get it to stay in the circle shape – but because it was soft, I was easily able to shape it once it was on the plate which was really helpful.
For the cakes, I wanted to use the mini bundt mold I have. I thought this would give the cakes a nice, special shape for Valentine’s Day. I followed a Food Network recipe for the cake. It was a pretty straight forward recipe and since I was using a the mini bundt mold, I shortened the cook time to 15 minutes.
Once the cakes were cooled enough to handle, I popped them out of the mold. While they were baking, I put together a grapefruit glaze. I drizzled some of the glaze on top of the brownie and stuck the mini cake on it. Once dried, this will hold the desert together. I then drizzled glaze over top of the mini bundt cake to finish it off.
The flavoring was really interesting and decadent. You have the rich brownie and then the dense citrus cake together and then the glaze ties it all together. It is not a “classic” dessert, but it is yummy!
Altogether, this was time consuming since I made the brownies and cake from scratch. I think you could easily use mixes for both components instead. I’m already thinking up what other kinds of cakes I can try over a brownie….like caramel cake or brown butter! With some caramel sauce drizzled on top with a sprinkle of sea salt?! For the Glaze, I combined 3/4 c powdered sugar and 1 1/2 tbsp of grapefruit juice
